Italian-style Green Beans
These are delicious with lamb or pork. If
flat Italian green beans are available, substitute them in the recipe.
Makes 6 servings
2 tablespoons good-quality olive oil
1 to 2 cloves garlic, minced
2 pounds thinnest green beans, topped and tailed
1 cup chicken stock; or 1 cup water
Salt and freshly ground black pepper to taste
1 tablespoon chopped fresh oregano, plus additional for garnishing
Heat the oil in a large heavy saucepan
over medium heat.
Add the garlic and cook, being careful
not to burn it, for 1 minute.
Stir in the beans and toss to coat with
the oil.
Stir in the stock. Season with salt,
still over medium heat, until the beans are barely tender and most of
the liquid is evaporated, 5 to 7 minutes.
Serve this simple cooking recipes very
hot, garnished with the additional oregano.
