Candied Baked Plantains
Try these of sweet potatoes with roast
pork or baked ham.
Makes 6 servings
4 tablespoons (1/2 stick) butter, plus additional for buttering
1/3 cup firmly packed dark brown sugar
¼ cup granulated sugar
½ teaspoon ground cinnamon
½ cup apple cider, or unsweetened apple juice
3 very ripe (blackened outside) plantains, peeled and halved lengthwise
1/3 cup unsalted roasted peanuts, very coarsely chopped
Chopped fresh parsley
Preheat the oven to 325°F. Generously butter a shallow baking dish that
will just hold the plantains in one layer, cut side up.
Melt 4 tablespoons of butter in a small saucepan over medium heat and
stir in the sugars. Add the cinnamon and apple juice. Cook, stirring,
until thick and syrupy, 2 to 3 minutes.
Pour the syrup over the plantains, sprinkle the peanuts over the top,
and bake until the plantains are very tender, 45 minutes or longer.
Baste with the syrup from time to time. Serve this candied bake cooking
plantains recipes very hot, with the syrup spooned over the plantains,
garnished with the parsley.
