Baked or Roasted Plantains
This very simple method of cooking
plantains makes them a delicious substitute for the ever-popular baked
potato. Use green plantains or ones that have only have a slight tinge
of yellow. Preheat the oven to 350°F. Place the whole, unpeeled
plantains, one per person, directly on the rack in the preheated oven,
bake until very tender when pierced with a sharp fork, 30 to 40
minutes. To serve, remove one strip of peel from the top of each
plantain. Mash them slightly with a fork, inside the skin. Season with
a little butter, salt, and pepper, just as if it were a baked sweet
potato.
