Cooking Plantains with Baked or Roasted Methods

Baked or Roasted Plantains

 

This very simple method of cooking plantains makes them a delicious substitute for the ever-popular baked potato. Use green plantains or ones that have only have a slight tinge of yellow. Preheat the oven to 350F. Place the whole, unpeeled plantains, one per person, directly on the rack in the preheated oven, bake until very tender when pierced with a sharp fork, 30 to 40 minutes. To serve, remove one strip of peel from the top of each plantain. Mash them slightly with a fork, inside the skin. Season with a little butter, salt, and pepper, just as if it were a baked sweet potato.
