Choose and Buy Fresh Green Plantains


Except in ethnic markets, fresh green plantains are often piled individually in the produce bin, unlike bananas, which are sold in “hands” or small bunches. Look for smooth, firm, un-bruised fruit. Do not buy any that have soft spots, cut ends or show any signs of mold. If there is time, you will have a better quality if you ripen plantains at home. Plantains are available all year.


Unless they are very large, you should count one fresh green plantain per person.
