Creamed Turnips
Grilled duck, or any game bird, goes well
with this old-fashioned dish.
Makes 6 servings

1 tablespoon butter

11/2 pounds small firm turnips greens, peeled, cut into
1/2 inch dice or sliced,
simmered in salted water to until just tender, about 15 minutes, and
drained

2/3 cup heavy cream

Pinch sugar
-
1/4 teaspoon nutmeg

Salt and freshly ground black pepper to taste

2 tablespoons snipped fresh chives
Melt the butter in a heavy, medium-size
saucepan over medium heat.
Add the turnips and toss to coat. Pour in
the cream and cook, uncovered, until the sauce is thick and the turnips
are very tender, 15 to 20 minutes.
Stir in the sugar and nutmeg. Season well
with salt and pepper. Cook 5 minutes longer.
