Glazed Turnips Greens with Sliced
Chestnuts
Turnips greens are a much maligned vegetable. The small ones are
deliciously sweet and crisp, and with this sweet glaze they are even
better. Serve these alongside herb-roasted racks of lamb or pork loin.
Makes 6 servings
2 tablespoons butter
1/2 cup well-flavored chicken stock
1/4 cup dry white wine
6 small turnips greens, peeled and sliced
1/4 pound chestnuts in the shell, peeled,
and sliced
1 tablespoon sugar
Salt and freshly ground black pepper to taste
Chopped fresh parsley
Melt the butter in a medium-size heavy
saucepan or skillet over medium heat. Stir in the stock and wine. Add
the turnips greens and chestnuts.
Cover and simmer over low heat until the
turnips greens are just tender, about 15 minutes. Uncover and sprinkle
with sugar.
Cook over medium heat, tossing, until the
sauce becomes a thick glaze, 3 to 5 minutes. Season with salt and
pepper. Toss to coat the turnips greens and chestnuts with the glaze.
