Selection of fresh clove garlic:
No matter which type of garlic is in the market, look for plump, heavy,
dry heads. Unless it is the only kind available, avoid garlic sold in
little cardboard boxes. I find these heads are often dried out – or
that the fresh cloves are tiny and difficult to peel. Do not buy garlic
that has begun to sprout or that has been stored where moisture can get
at it and turn the cloves moldy. Do not buy garlic heads that are light
in weight, soft, or dried out.
