Storage and Preparation:
Fresh Okra is much more perishable than it looks. It is at its very
best if prepared the day it is picked or at least the day it is bought.
If it must be stored, place the pods, unwashed, in a small paper bag or
wrap them in paper towels and seal in a perforated plastic vegetable
bag for only a day or two.
Wash the okra just before using. Dry on kitchen towels. If the pods are
to be used whole, snip off the stem, leaving about 1/8 inch. Do not cut
into the pods. For smaller pieces, cut off the stem and cut the larger
pods across into thick slices or chunks.
