Bake Cooking Okra
This is a make-ahead dish. It can be put together in the morning and
then baked just before serving. It’s a tasty combination to serve with
roasted or baked chicken. Also, it is fast and simple to bake cooking
this recipes.
Makes 6 servings
Butter
1 ½ pounds large okra, trimmed, and cut into thick slices
2 large ripe tomatoes, peeled, seeded, and coarsely chopped
2 small onions, very thinly sliced
½ jalapeno pepper, seeded and minced
4 ounces slab bacon, cut into ¼ inch dice, fried until cooked, but not
quite crisp, and drained on paper towels
Salt and freshly ground black pepper to taste
1 tablespoon chopped fresh sage, or 1 teaspoon dried
1/3 cup dry white wine
½ cup grated Monterey Jack cheese
Preheat the oven to 350°F. Generously butter a medium-size deep
ovenproof casserole.
Layer half of the okra in the prepared casserole. Top with half the
tomatoes and then half the onions.
Sprinkle with half the jalapeno. Top with
half the bacon. Season the vegetables well with salt, pepper, and half
the sage. Repeat the layers. Pour the wine over all.
Cover the casserole with aluminum foil. Bake cooking until the
vegetables are tender, 35 to 40 minutes. Remove the foil and spread the
cheese over the vegetables. Bake, uncovered, until the cheese is melted
and bubbling, about 10 minutes longer.
