Asparagus and Lemon with Smoked Garlic
Mayonnaise
The best way to enjoy asparagus is to roast or char-grill it. If you
are using a charcoal barbecue, start cooking when the coals turn white,
since this is when they are at their hottest. If using a stove-top
grill pan, start cooking when the pan is smoking hot to maximize the
asparagus flavor. To prepare asparagus, just snap off and discard the
woody ends.
SERVES 4
24 asparagus spears
2-3 tablespoons olive oil
Sea salt and freshly ground black pepper
Freshly squeezed juice of 1/2 lemon, to
serve
SMOKED GARLIC MAYONNAISE
Heat a barbecue or stove-top grill pan
until very hot.
Put the asparagus in a bowl, add the
olive oil and toss to coat. Set on the hot barbecue or stove-top grill
pan and cook for about 10 minutes, turning frequently, or until
starting to become golden brown.
Remove to a plate and sprinkle with salt
and pepper. Squeeze the lemon juice over the top before serving.
Stir the smoked garlic into the
mayonnaise and serve as an accompaniment.
