Asparagus and Lemon with Smoked Garlic Mayonnaise


The best way to enjoy asparagus is to roast or char-grill it. If you are using a charcoal barbecue, start cooking when the coals turn white, since this is when they are at their hottest. If using a stove-top grill pan, start cooking when the pan is smoking hot to maximize the asparagus flavor. To prepare asparagus, just snap off and discard the woody ends.

 

SERVES 4

  • 24 asparagus spears

  • 2-3 tablespoons olive oil

  • Sea salt and freshly ground black pepper

  • Freshly squeezed juice of 1/2 lemon, to serve

SMOKED GARLIC MAYONNAISE

  • 3-4 smoked garlic cloves, crushed

  • 4 tablespoons mayonnaise

  1. Heat a barbecue or stove-top grill pan until very hot.

  2. Put the asparagus in a bowl, add the olive oil and toss to coat. Set on the hot barbecue or stove-top grill pan and cook for about 10 minutes, turning frequently, or until starting to become golden brown.

  3. Remove to a plate and sprinkle with salt and pepper. Squeeze the lemon juice over the top before serving.

  4. Stir the smoked garlic into the mayonnaise and serve as an accompaniment.
