Broccoli Trees with Pan-Fried Pine Nuts
This is about as speedy as good cooking
gets! Broccoli is ideal for the microwave, as the stalks and florets
cook evenly and don't go soggy.
SERVES 4
Cut the broccoli into medium florets,
leaving a long stalk. Put in a large, microwave-safe bowl, add
50 ml water, cover with microwave-safe cling film or a lid and
microwave on HIGH for 3 minutes. Alternatively, steam the broccoli for
4-5 minutes.
Meanwhile, put the butter, pine nuts and
salt and pepper to taste in a small saucepan over medium heat. Cook for
2-3 minutes until the nuts are golden and the butter is foaming.
Drain the broccoli through a colander or
sieve, return to the bowl and toss with the pine nuts and butter. Serve
immediately or let cool and serve as a salad.
