Crunchy Fruit & Nut Salad

 

Preparation time: 20 minutes

Serves 8

  • 2 green-skinned dessert apples

  • 2 red-skinned dessert apples

  • 2 Conference pears

  • 2 tablespoons lemon juice

  • 1 head of celery, trimmed and sliced

  • 50-75g (2-3 oz) shelled walnuts

  • 4 spring onions, trimmed and thinly sliced

Dressing:

  • 1 tablespoon white wine vinegar

  • 3 tablespoons extra virgin olive oil

  • 2 tablespoons single cream

  • Salt and pepper

  1. Core the apples and slice thinly. Place in a large bowl. Peel, core and slice the pears and add to the bowl with the lemon juice. Stir lightly but thoroughly to mix, to prevent the fruit from discoloring, then pour off the excess lemon juice. Add the celery, walnuts and spring onions.

  2. To make the dressing, vigorously whisk together the vinegar and oil and season with salt and pepper. Whisk in the cream and pour the dressing over the salad. Toss lightly but thoroughly, then turn into a salad bowl, cover closely, and chill in the refrigerator until required.
