Green Beans in Tomato Sauce


Good served hot or cold, this Italian recipe is stunning in its simplicity. It can be served as an accompaniment to a main dish or as a starter.

 

SERVES 4

  • 4 tablespoons olive oil

  • 1 teaspoon chili oil

  • 1 garlic clove, crushed

  • 800 g canned chopped tomatoes

  • 600 g green beans, topped

  • sea salt

  1. Put the olive and chili oils and garlic in a large saucepan and heat until the garlic has turned very lightly golden.

  2. Stir in the tomatoes, 250 ml water and a generous pinch of salt. Bring to the boil, then add the beans.

  3. Cover with a lid and cook gently for 30-40 minutes, stirring occasionally, until the beans are very tender.
