Hot & Sour Noodle Vegetable Salad

 

Preparation time: 15 minutes, plus draining and soaking

Serves 4-6

  • 1/2 cucumber, peeled, halved and deseeded

  • 50 g (2 oz) vermicelli rice noodles

  • 1 carrot, cut into long julienne strips

  • 1 red chili, deseeded and cut into long julienne strips

  • 2 tablespoons chopped coriander

  • Salt

Dressing:

  • 2 tablespoons sunflower oil

  • 1/2 teaspoon sesame oil

  • 2 teaspoons caster sugar

  • 2 tablespoons lime juice

  • 1 tablespoon vegetarian fish sauce or soy sauce

  • Salt and pepper

To Garnish:

  • Coriander sprigs

  1. Sprinkle the cucumber with a little salt and set aside to drain for 30 minutes. Put the noodles in a bowl, cover with boiling water and soak for 4-6 minutes, or according to the packet instructions. Wash and dry the cucumber. Thoroughly drain the noodles and put them in a large bowl.

  2. Combine all the dressing ingredients together and season with salt and pepper to taste. Add half to the noodles and toss well.

  3. Cut the cucumber into long thin julienne strips and add to the noodles together with the julienne strips of carrot and chili. Stir in the coriander and the remaining dressing and serve at once, garnished with coriander sprigs.
