Roasted chicory with onion

 

I first had chicory cooked in this way in Belgium - it has been a favorite vegetable ever since.


Preparation time: 10 minutes
Cooking time: 40 minutes
Serves 4

  • 4 heads chicory

  • Lemon juice

  • 1 red onion, finely chopped

  • Salt and black pepper

  • 1-2 Tbsp olive oil

  1. Preheat the oven to 200C/400F/Gas Mark 6.

  2. Cut the chicory in half lengthwise and place in a shallow roasting pan.

  3. Add a squeeze of lemon juice. Scatter the onion on top, season lightly and drizzle with the olive oil.
    Roast for 30 to 40 minutes, until browned and tender. Serve hot or warm.
