Lasagna with lentils
Always a popular main course, the
microwave takes a lot of the work and washing up out of this recipe.
Make sure that both rater sauces are well flavored so the dish has a
well-rounded taste.
INGREDIENTS
175g (6 oz) continental lentils
900ml (11/2 pint) boiling water
30ml (2 tbsp) sunflower oil
1 medium onion finely chopped
2 cloves garlic, crushed
1 aubergine, weighing about 225g (8 oz),
chopped
100g (4 oz) carrots, diced
400g (14 oz) can tomatoes
30ml (2 tbsp) tomato puree
30ml (2 tbsp) shoyu
5ml (1 tsp) chopped fresh marjoram
Salt and black pepper
450ml (3/4 pint) skimmed milk
1/2 medium onion
1 bay leaf
6 pepper corns
Sprig of parsley
Sprig of thyme
25g (1 oz) sunflower margarine
25g (1 oz) whole wheat flour
8-10 pieces lasagna (precooked whole
wheat variety)
75g (3 oz) Cheddar cheese, grated
Method
Put the lentils in a deep bowl and pour
over the boiling water. Cover and cook for 12-15 mins. (all powers),
stirring 2-3 times. Leave to stand for 5 mins then drain.
Put the oil in a medium dish and cook for
1 min. 600W (30 secs. 700W; 1 min. 500W). Stir in the chopped onion and
the garlic, then cook for 2 mins. 600W (1.5 mins. 700W; 2.5 mins.
500W).
Add the aubergine and carrots, cover and
cook for 5 mins. 600W (4 mins. 700W; 6 mins. 500W), stirring once.
Add the tomatoes, purée, shoyu, herbs and
lentils. Re-cover and cook for 5 mins. 600W (4 mins. 700W; 6 mins.
500W), stirring once. Season well.
Put the milk, onion, bay leaf,
peppercorns and herbs in a jug and 141 FULL for 3.5 mins. 600W (2.5
mins. 700W; 4 mins. 500W). Leave to stand for 5 mins then strain.
Put the margarine in a medium dish and
cook for 30 secs. Stir in the flour and cook for 30 secs then pour in
the infused milk, stirring well. Cook for 2-3 mins. 600W (1 .5-2 mins.
700W; 2.5-3.5 mins. 500W), stirring every minute.
In a medium dish, layer pieces of lasagna
with the lentil and tomato sauce and the white sauce, finishing with
white sauce. Cover with grated cheese and cook for 6 mins. 600W (5
mins. 700VV; 7.5 mins. 500W); giving the dish a quarter turn every 2
mins. Brown under a preheated conventional grill.
