Boiled Lentils
Place the lentils vegetables in a large pot. Cover with water and bring
to a boil over medium heat. Reduce the heat to low and simmer,
partially covered, until tender. The cooking time can vary from 45
minutes to 11/2 hours, depending on the age and variety you are using. Be
sure to check the water level during the cooking process as lentils
absorb substantially more water than beans and can quickly boil dry.
Burned lentils have a very unpleasant taste.
Boiled lentils should be thoroughly drained. They can be used in other
recipes or can be seasoned with salt, pepper, cumin and fresh parsley -
and a little olive oil if you like. Serve with rice as a one-dish
vegetarian meal or set them alongside baked ham or hearty, garlicky
grilled sausages.
