Storage and Preparation:
Like dried beans, lentils vegetables
should be stored in a cool, dry place, preferably in an airtight
container.
While lentils do not need to be presoaked, they must be washed and
picked over carefully before using to eliminate any pebbles or dirt.
The easiest way to do this is to place the dry lentils in a large bowl
and run clear water over them. Any lentils that float to the surface
should be discarded, along with other extraneous bits and pieces that
appear when the seeds are stirred. Drain the lentils well, look for
pebbles or tiny stones, and then continue with the recipe. Most bulk
lentils sold in boxes have been prescreened and do not contain stones,
pebbles, or other matter, although boxes that have been kept on the
shelf for a long period of time may have attracted bugs and should be
washed.
