Healthy Onion Soup
A smooth flavorsome soup that's great
after a gigging session in the garden.

Heat the butter and oil together in a
large pan, add the onions and cook over a moderate heat for about 20
minutes, until well browned. It is important to brown and not burn the
onions, and to achieve a good rich chestnut-brown color, or the soup
will be insipid.

Stir in the flour, then cook for 2 to 3
minutes until well browned before gradually stirring in the stock.

Bring to the boil, add the seasoning,
cover and cook for 30 to 40 minutes.

Stir in the milk then season the soup to
taste, adding a little lemon juice. Reheat gently and serve with crusty
bread and strong cheese.
