Herring and mixed onion salad
Onions mixed with herrings and soured
cream is a typical Scandinavian cold-table dish which is great for
brunch or lunch. You can add any roe to this - fry it with the herrings
for 2 to 3 minutes.
Preparation times: 20 minutes
Cooking time: about 10 minutes
Serves 4
4 large herrings or 2 mackerel, filleted
Salt and black pepper
4 Tbsp oat flour or whole meal flour
3 Tbsp groundnut oil
2 heads butter head lettuce, washed and
broken into bite-size pieces
2 handfuls watercress
1 large apple, cored and sliced
1 Tbsp lemon juice
1 red onion, cut into rings
4 Tbsp soured cream
1 to 2 spring onions, trimmed and finely
chopped
Season the herring fillets well, then
turn them in the flour to coat.
Heat the oil in a large frying pan, add
the fillets skin side up and cook for 3 to 4 minutes, depending on
size.
Meanwhile, arrange the lettuce and
watercress on plates. Toss the apple in lemon juice and arrange on the
leaves.
Turn the herrings and cook for a further
2 to 3 minutes (add any roe at this stage, if using).
Arrange the onion rings on the salad.
Cut the herrings into bite-size pieces
and arrange on the salad. Add the soured cream, top with the chopped
spring onions and serve.
