Herring and mixed onion salad

 

Onions mixed with herrings and soured cream is a typical Scandinavian cold-table dish which is great for brunch or lunch. You can add any roe to this - fry it with the herrings for 2 to 3 minutes.


Preparation times: 20 minutes
Cooking time: about 10 minutes

Serves 4

  • 4 large herrings or 2 mackerel, filleted

  • Salt and black pepper

  • 4 Tbsp oat flour or whole meal flour

  • 3 Tbsp groundnut oil

  • 2 heads butter head lettuce, washed and broken into bite-size pieces

  • 2 handfuls watercress

  • 1 large apple, cored and sliced

  • 1 Tbsp lemon juice

  • 1 red onion, cut into rings

  • 4 Tbsp soured cream

  • 1 to 2 spring onions, trimmed and finely chopped

  1. Season the herring fillets well, then turn them in the flour to coat.

  2. Heat the oil in a large frying pan, add the fillets skin side up and cook for 3 to 4 minutes, depending on size.

  3. Meanwhile, arrange the lettuce and watercress on plates. Toss the apple in lemon juice and arrange on the leaves.

  4. Turn the herrings and cook for a further 2 to 3 minutes (add any roe at this stage, if using).

  5. Arrange the onion rings on the salad.

  6. Cut the herrings into bite-size pieces and arrange on the salad. Add the soured cream, top with the chopped spring onions and serve.
