Home-made beef burgers with spring onion
Home-made beef burgers are a real treat. Adding onion gives them loads
of flavor, but make sure is finely chopped or the burgers may fall
apart during cooking.

Cooking time: 12 minutes
Serves 4
450 g (1 lb) minced beef
115 g (4 oz) coarsely grated mozzarella cheese
4 spring onions, trimmed and very finely chopped
Salt and black pepper
1 egg yolk
Rolls or baps and salad to serve
Mix all the ingredients together in a bowl, binding them with the egg
yolk. Shad into four burgers - wetting your hands makes them easier to
handle.
Heat a ridged grill pan until hot. Add the burgers and cook over a
moderate heat for 4 to 5 minutes on each side. No additional oil should
he necessary - just rely on the fat in the meat. Serve hot in baps or
burger rolls with salad.
