Onion rings in beer-batter
A delicious batter for the ever popular
fried onion rings. Beer gives the batter an excellent flavor and the
addition of egg white keeps it crisp and light.

Heat the oil to 190C/375F in a large pa
n or a deep-fryer.

Blend the flour with the oil and beer in
a bowl. Whisk the egg white until stiff, then fold it into the batter
just before using - this is easiest with a wire whisk.

Separate the onion slices into rings.
Coat them in the batter just before frying, then lower them carefully
into the hot oil. Fry the rings for 3 to 4 minutes until golden brown,
burning them over as necessary.

Remove the rings from the oil with a
slotted spoon and drain them on crumpled kitchen paper. Continue
cooking in batches.

Serve with steaks, grilled fish or as a
simple snack on their own with a garlic or tomato dip.
