Poppy seed onion rings
I don't always feel like making a batter
when I fancy some onion rings, so this crisp flour coating makes an
ideal alternative. The poppy and mustard seeds provide a good contrast
to the soft texture of the onion.

Ingredients

Heat the oil to 180C/350F in a large pa
n or a deep-fryer.

Mix together all the dry ingredients.
Separate the onion slices into rings.

Dip the rings into a little milk, then
toss them in the spiced flour. Prepare the rings in about 3 batches,
just before frying them.

Carefully lower the onion rings, a few at
a time, into the hot oil. Fry for 3 to 4 minutes until golden brown,
then scoop them out with a slotted spoon and drain on crumpled kitchen
paper. Repeat until all the rings are fried.

Serve as a side dish, or on a bed of
salad leaves as a quick snack.
