Spice onion balls
This is cream based and rather richer
than a traditional white sauce, but it is bright in taste and color and
is excellent with white fish like roast cod or grilled skate.

Ingredients

Oil to deep-fry

175 g (6 oz) whole meal flour

1 tsp salt

1/2 tsp bicarbonate of soda

1 Tbsp ground rice

1 Tbsp mild curry powder

1 tsp chili powder
-
1 small green chili, seeded and finely
chopped

2 large onions, finely sliced

250 mL (9 fl oz) water
Method

Heat the oil in a deep-fryer to
170C/330F.

Mix all the dry ingredients together in a
bowl, then add the chili powder and chopped chili and onions.

Add more onion if necessary; there should
be more onion than spiced flour.

Gradually add sufficient water to obtain
a soft, thick paste.

Carefully lower heaped teaspoonfuls of
mixture into the hot oil and fry for about 10 minutes, until browned
and crisp.

Drain thoroughly on kitchen paper and
serve with chutney or onion, radish or cucumber raita.
