Mixed pickle salad

 

A salad accompaniment - just a couple of spoonfuls is all you need to brighten up even the dullest of leftovers.


Preparation time: 10 minutes

Serves 4

  • 6 cooked new potatoes, chopped

  • 250 g (9 oz) mixed pickles including onions, gherkins, and bell peppers

  • 1 red onion, chopped

  • 6 spring onions, trimmed and chopped

  • Salt and black pepper

  • About 4 Tbsp mayonnaises

  1. Place the chopped potatoes in a bowl.

  2. Roughly chop the pickles and add them to the potatoes with the onions and a little seasoning.

  3. Stir in just enough mayonnaise to moisten the salad before serving.
