Mixed pickle salad
A salad accompaniment - just a couple of spoonfuls is all you need to
brighten up even the dullest of leftovers.
Preparation time: 10 minutes
Serves 4
6 cooked new potatoes, chopped
250 g (9 oz) mixed pickles including onions, gherkins, and bell peppers
1 red onion, chopped
6 spring onions, trimmed and chopped
Salt and black pepper
About 4 Tbsp mayonnaises
Place the chopped potatoes in a bowl.
Roughly chop the pickles and add
them to the potatoes with the onions and a little seasoning.
Stir in just enough mayonnaise to moisten the salad before serving.
