Onion and chicken satay skewers
Probably one of the best foods for the barbecue! Soak the bamboo sticks
in water to stop them scorching during cooking. This is also delicious
made from chicken or pork.
Serves 4
Preparation time: 15 minutes, plus 2
hours marinating
Cooking time: about 10 minutes

Small piece fresh root ginger

2 shallots, chopped

2 stalks lemon grass, bruised and finely
chopped

2 Tbsp satay (peanut) sauce

1 tsp ground turmeric

1 Tbsp demerara sugar

1/2 tsp salt

450 g (1 lb) chicken breast fillets or
pork tenderloin, trimmed and very finely sliced

Grate the ginger, gather up the pieces in
your hand, then squeeze the juice into a small blender or jug. Add the
shallots, lemon grass, satay sauce, turmeric, sugar and salt. Blend
until smooth, adding a little water if necessary.

Shred the chicken or pork, then marinate
in the sauce in a small howl for 2 hours, Turn the meat in the sauce
once or twice.

Soak 16 wooden skewers it cold water for
30 minutes while the meat is marinating.

Thread the strips on to the skewers - do
not pack too tightly, so the meat can cook through quickly.
Cook the skewers for 3 to 4 minutes on each side, either over a
medium-hot barbecue or under a grill. The cooking time will depend on
the thickness of the meat. Serve hot, with a cucumber and chili salad.
