Onion coleslaw
Coleslaw should always include a generous
amount of onions. It is often better the day after it is made, when the
flavors have had a chance to blend.
Preparation time: 15 minutes
Serves 6
1/2 small green cabbage, shredded
3 large carrots, peeled and grated
1 red onion, finely chopped
4 spring onions, trimmed and finely sliced
Salt and black pepper
125 ml (4 fl oz) mayonnaise
9 tbsp natural yoghurt
Mix all the vegetables together in a large bowl and season well.
Add the mayonnaise and yoghurt and thoroughly, ensuring that all the
vegetables are well coated in the dressing.
