Onion and orange salsa
This is good served with salad leaves,
and also spooned over thick bean soups or as a garnish to bean
casserole.
Preparation time: 20 minutes
Serves 4
1 orange
2 tomatoes, chopped
1/2 red onion
4 spring onions, finely chopped
1 small green chili, seeded and finely
chopped
2 Tbsp chopped fresh coriander
1 green pepper, seeded and shredded
Salt and black pepper
Salad leaves to serve (optional)
Prepare a few strands of rind from the
orange and reserve for garnish.
Cut away all the pith and membrane from
the orange, then cut the flesh into good-size chunks, removing any
seeds.
Mix the orange with all the remaining
ingredients, seasoning well.
Allow to stand for at least an hour, then
serve on a bed of salad leaves if you wish.
