Onion and orange salsa


This is good served with salad leaves, and also spooned over thick bean soups or as a garnish to bean casserole.

Preparation time: 20 minutes
Serves 4

  • 1 orange

  • 2 tomatoes, chopped

  • 1/2 red onion

  • 4 spring onions, finely chopped

  • 1 small green chili, seeded and finely chopped

  • 2 Tbsp chopped fresh coriander

  • 1 green pepper, seeded and shredded

  • Salt and black pepper

  • Salad leaves to serve (optional)

  1. Prepare a few strands of rind from the orange and reserve for garnish.

  2. Cut away all the pith and membrane from the orange, then cut the flesh into good-size chunks, removing any seeds.

  3. Mix the orange with all the remaining ingredients, seasoning well.

  4. Allow to stand for at least an hour, then serve on a bed of salad leaves if you wish.
