Onion raita
A refreshing salad to serve with fried
dishes, or with plain-cooked steak. It is also a cooling accompaniment
to many Indian dishes.

Serves 4
1 onion, finely sliced
2 Tbsp vegetable oil
1 tsp cumin seeds
1 red onion, finely sliced
1 small red chili, seeded and finely
chopped (optional)
2-3 Tbsp chopped fresh coriander
350 g (12 oz) natural yoghurt
Salt and black pepper
Cook the onion in the oil for about 3 to
4 minutes until softened but not browned. Add the cumin seeds and cook
for a further 2 to 3 minutes until golden brown.
Turn into a serving bowl.
Add all the remaining ingredients,
seasoning well to taste. Allow to stand for 10 to 15 minutes before
serving, if possible, to allow the flavors to blend.
