Onion raita

 

A refreshing salad to serve with fried dishes, or with plain-cooked steak. It is also a cooling accompaniment to many Indian dishes.

Serves 4

  • 1 onion, finely sliced

  • 2 Tbsp vegetable oil

  • 1 tsp cumin seeds

  • 1 red onion, finely sliced

  • 1 small red chili, seeded and finely chopped (optional)

  • 2-3 Tbsp chopped fresh coriander

  • 350 g (12 oz) natural yoghurt

  • Salt and black pepper

  1. Cook the onion in the oil for about 3 to 4 minutes until softened but not browned. Add the cumin seeds and cook for a further 2 to 3 minutes until golden brown.

  2. Turn into a serving bowl.

  3. Add all the remaining ingredients, seasoning well to taste. Allow to stand for 10 to 15 minutes before serving, if possible, to allow the flavors to blend.
