Shallot Caesar salad

Shallot Caesar salad


For days when you can't live without a Caesar salad but your friend does not want garlic! Use the best Parmesan cheese you can find.

Preparation time: 5 minutes
Cooking time: 15 minutes
Serves 2 as a main course or 4 as a starter

  • 8 Tbsp freshly grated Parmesan cheese shavings

  • 2 heads butter head lettuce, rinsed and broken into bite-size pieces

  • 1 large banana shallot or 2 standard ones, finely chopped

  • 2 Tbsp olive oil

  • 2 large eggs, beaten

  • 2-3 Tbsp double cream

  • Salt and black pepper

  1. Heat a large non-stick frying pan, then carefully fry the cheese in 8 little mounds for 1.5 to 2 minutes, until golden brown and melted together into a crisp. Turn with a spatula and cook the other side. Cool on a wire rack.

  2. Arrange the lettuce in a large bowl.

  3. Cook the chopped shallot in the oil in a pan until softened but not browned. Beat the eggs with the cream and add to the pan. Cook gently until just starting to set.

  4. Break up the Parmesan and add the crisp pieces to the lettuce with plenty of salt and pepper, then pour the egg dressing over. Mix thoroughly and serve immediately.
