Fried Onions and Apples
Onions and apples are meant to go with
pork. Next time you have a roast pork loin, serve thick juicy slices
accompanied by these delicious onions. The simple sweet-savory
combination is a perfect match.
Makes 6 to 8 servings
3 tablespoons butter
3 large yellow or red onions, halved root to stem and cut into thin
wedges
2 Golden Delicious apples, peeled, cored, and cut into wedges
Salt and freshly ground black pepper to taste
1/4 teaspoon ground allspice
1/3 cup apple cider
1/3 cup chopped fresh parsley
Melt the butter in a large heavy skillet
over medium heat. Add the cup up onions and cook, stirring from time to
time, until the onions begin to turn translucent, about 10 minutes.
Add the apples and cook, covered,
stirring occasionally, until the onions are tender and apples are
golden brown, but not falling apart, about 10 minutes longer.
Season well with salt, pepper and the
allspice. Pour in the cider and cook over medium heat until the liquid
is almost evaporated, leaving only a few spoonfuls of thick sauce, 2 to
3 minutes.
Serve the onions and apples hot,
