Jacket-Roasted Onions with Balsamic
Vinegar
Just like potatoes, onions can be roasted
in their jackets. Sometimes I like to serve whole baked white or sweet
potatoes at the same time, with a thick cut of roast beef or
fork-tender slices of grilled sirloin steak.
Makes 6 servings
6 medium-size onions, yellow, Vidalia, Walla Walla, or Texas Super
Sweets
Pure olive oil
Extra-virgin olive oil
Salt and freshly ground black pepper to taste
Balsamic vinegar to taste
Preheat the oven to 375F.
Wipe the outside of the onions clean. Rub the skins with a little of
the pure olive oil. Place the oiled onions on the rack in the middle of
the oven and bake until they are very tender when pierced with a fork,
1 to 1 1/2 hours.
To serve, halve the onions horizontally, remove the peel, drizzle with
the extra-virgin olive oil, and season well with salt and pepper. Pass
a bottle of good balsamic vinegar for sprinkling. Here you go for a
