Onion Rings in Beer Batter
The batter on these rings is more substantial than the battle for
Easy Fried Onion Rings and makes them a bit more filling. These are
equally good with liver, grilled fish, or beef.
Makes 6 to 8 servings
1 1/2 cups all-purpose flour
1 teaspoon salt, plus additional for salting
1 teaspoon paprika
One 12-ounce can beer, pale, light, or alcohol free
Oil for deep-frying
3 to 4 large sweet onions, Vidalia, Walla Walla, or Texas Super Sweets,
thickly sliced and separated into rings
In a medium-size bowl, stir together the flour, salt, and paprika.
Whisk the beer into the mixture.
Heat the oil to 365F. in a deep-fat fryer or deep heavy skillet.
Dip the onion rings in the batter. Drain off any excess and fry the
coated rings in batches until crisp and golden on both sides, 3 to 4
minutes per batch.
Drain on paper towels. Salt slightly and serve this simple onion rings
in beet batter cooking recipes at once, very hot.
