Selection:
While you may always grow your own hot peppers, they are becoming much
more readily available commercially. If your local supermarket does not
carry at least two or three different varieties, they can easily be
ordered from mail-order supply houses. However, no matter what variety
of fresh hot chiles you may be selecting, choose only those that are
fresh looking, smooth skinned, firm, and generally untwisted. Look for
those that are bright colored and shiny. Avoid any peppers that are
cracked, limp, or shriveled or that show black spots or signs of mold.
