Selection:
Look for the plumpest, juiciest, most brightly colored peppers
available. Regardless of the color it should be clear and shiny. Avoid
peppers that are shriveled or wrinkled, have soft spots or cracks, is
dull looking, or show signs of mold. In general, the redder the pepper,
the sweeter it will be.
Most sweet peppers are available in market all year long, though you
may find locally grown, very freshly picked peppers at farm stands
during the summer and into the early fall.
