Braised Kale with Bacon Recipes
This easy kale greens dish is very good
with grilled tuna, but it will also enhance a meal based on a good
stew, such as beef bourguignon.
Makes 6 servings
2 pounds darkest green kale, stemmed and torn into large pieces
¼ cup chicken stock
¼ cup dry white wine
4 slices bacon, cut into ¼ inch dice, fried until almost crisp, and
drained on paper towels
Salt and freshly ground black pepper to taste
Pile the kale into a large kettle. Add
the stock and wine. Cover and simmer over low heat for 5 minutes.
Stir in the bacon. Simmer, tossing the
kale with a fork from time to time, until it is tender, 5 to 6 more
minutes.
Season well with salt and pepper. Toss
well with a fork to coat with the sauce remaining in the kettle, and
serve very hot.
