How to Choose Kale Greens

Selection:

 

No matter which kind of kale you choose, pick the brightest, most vibrantly colored leaves available, the leaves should be crisp, with stems that are not the least limp or wilted. Avoid leave that are brown around the edges, are yellowed (unless you are buying flowering kale), or have rusty-colored stem ends - which would indicate they are less than garden fresh.

Kale is at its best once the weather turns cold and is a good condition to winter menus. Count about 1/3 pound raw kale per person.
