How to Cook Kale Greens

Wilted Kale

Pile the washed (but not dried) and stemmed kale in a large kettle. Place the kettle over medium heat and cook, tossing once or twice with a fork, until the kale softens and is tender - 5 to 8 minutes. Sauce the kale with a little butter or bacon fat and season well with salt and pepper. Pass a small cruet of cider vinegar if you like.


Boiled Kale

Bring a large kettle of water to boil. Add the washed and stemmed kale, and boil until tender, 7 to 8 minutes. Drain. Add butter, salt, pepper, and hot pepper sauce to taste.
For a full-flavored kale, substitute boiling chicken stock for the water. Drain, reserving the cooking liquid to use as a soup stock.

If you would like to cook kale with meat, add a ham bone, ham hock, salt pork, or slab bacon to the boiling water. Simmer for 30 to 45 minutes before adding the kale. Simmer the kale for about 10 minutes. If you are serving old-fashioned dinners, simmer the kale for 15 but no longer than 20 minutes. Drain well. Remove the meat, cut up, and toss with the kale before seasoning.
