Broccoli with olives and garlic
The pungent olive and tomato sauce with garlic and spices gives the
broccoli a rich and exotic flavor. Everything is heated so quickly that
the broccoli remains crisp yet tender. Serve it with pasta shapres,
such as rigatoni, and freshly grated Parmesan cheese to make a
delicious main dish.
Ingredients:
5ml (1 tbsp) olive oil
1 small onion, finely chopped
350g (12 oz)broccoli, divided into small,
even-sized florets
8-12 large olives, stoned
1 medium tomato
5ml (1 tbsp) red wine vinegar
1 clove garlic
2.5ml (1/2 tsp) garam masala
salt and black pepper
Put the oil in a medium dish and cook
full for 1 min. 600W (30 sec. 700W, 1 min. 500W). Stir in the onion and
cook full for 2 minutes. 600W (11/2 minutes. 700W, 21/2 minutes 500W).
Stir in the broccoli, then add 30 ml (2
tbsp) water. Cover and cook full for 5 minutes. 600W (4 minutes. 700W,
6 minutes. 500W), stirring once. Leave to stand for 2-3 minutes.
Meanwhile, liquidize the olives, tomato,
vinegar, garlic and garam masala to make a coarse-textured sauce.
Drain the vegetables, then toss in the
sauce. Cover and cook full for 1 minute to reheat. Season well with
salt and pepper. Serve hot or cold.
