Microwaved Fennel
For six servings, trim 3 medium-size
fennel bulbs. Halve them lengthwise and arrange in one layer in a
microwave dish. Add 3 tablespoons of water or chicken stock, cover with
plastic microwave wrap, and vent. Microwave on high for 6 to 7 minutes,
depending on the size of the fennel. Let stand for 5 minutes before
uncovering.
Boiled Fennel
Plain boiled or braised fennel is
delicious if drained, seasoned with salt and pepper, and served with a
drizzle of olive oil or melted butter.
For six servings, trim 3 medium-size fennel bulbs. Halve them
lengthwise and arrange them cut side down in a large, heavy skillet.
Add enough water or chicken stock to just cover the fennel. Cover and
simmer until the vegetable is fork tender, 20 to 30 minutes. Drain and
season.
Steamed Fennel
Arrange trimmed and halved or quartered
fennel bulbs in a steamer basket or colander. Steam, covered, over
simmering water until tender when pierced with a sharp fork, 20 to 25
minutes. Serve very hot or marinate in a savory dressing and serve at
room temperature.
