Buttered Hominy
If you are serving hominy vegetable for
the first time, I think this easy and simple recipes is the one to cut
your teeth on. While the flavor of the hominy is clearly apparent, the
milk makes this a delicate dish. Serve it with roast pork or chicken.
Makes 6 servings
Two 15 ½ ounce cans white hominy, drained in a sieve and well rinsed
with cold water
1 cup milk
3 tablespoons butter
Salt and freshly ground black pepper to taste
2 tablespoons chopped fresh parsley
Combine the hominy, milk, and butter in a
medium-size saucepan.
Simmer over low heat until the milk is
almost absorbed, stirring from time to time, 25 to 30 minutes.
Season well with salt and pepper.
Serve this simple vegetable recipes very
hot, garnished with the parsley.
