Here is a colorful summer squash dish
that will go well with almost anything you might want to grill. For a
lighter meal, serve this pasta with a green salad and lots of good
bread. It is also a simple vegetable recipes.
Makes 6 to 8 servings
2 tablespoons olive oil
1 bunch (6 to 8) green onions (scallion), white and light green parts
only sliced
1 large clove garlic, minced
1 teaspoon chopped fresh thyme
2 small yellow squash, trimmed and grated
2 small zucchini, trimmed and grated
Salt and freshly ground black pepper to taste
1 pound thin spaghetti, cooked, drained, and kept hot
Freshly grated parmesan cheese
Heat the oil in a large skillet over medium heat. Add the green onions
and cook, stirring, for 2 minutes. Stir in the garlic and thyme. Add
the yellow squash and zucchini. Cook over high heat, tossing with a
fork, 2 minutes. Season well with salt and pepper.
Add the hot spaghetti to the vegetables in the skillet. Toss well to
combine. Remove from the heat. Serve this fast healthy recipes
immediately, very hot, with the cheese passed separately.
