Gratin of Butternut Squash with Onions
and Tomatoes
Butternut squash has a naturally sweet
flavor that goes very well with roast meats. This gratin would be fine
with a roast chicken or turkey, beef ribs or even thick slices of
homemade meat loaf.
Makes 6 servings
2 tablespoons olive oil, plus additional for greasing
2 large onions, thinly sliced
2 cloves garlic, minced
3 pounds butternut squash or another hard-skinned squash, seeded,
peeled sliced, boiled in salted water to cover for 5 minutes, drained,
and dried on kitchen towels
2 large ripe tomatoes, thinly sliced
Salt and freshly ground black pepper to taste
1 cup milk
1/4 cup freshly grated Parmesan cheese
Preheat the oven to 350F. Lightly grease a 11/2-quart ovenproof
casserole.
Heat 2 tablespoons of oil in a medium-size heavy skillet over medium
heat. Add the onions and cook, stirring, until just wilted, about 5
minutes. Stir in the garlic. Cook 1 minute.
Arrange one-third of this types of squash slices in the bottom of the
prepared dish. Spread half of the onion and garlic mixture over the
squash and then with half of the tomato slices. Season well with salt
and pepper. Repeat the layers, ending with butternut squash. Season
well with salt and pepper. Pour in the milk and sprinkle the cheese
over the top.
Bake until very tender and most of the milk has been absorbed, about 1
hour. Serve this simple cooking recipes very hot.
