Add this to your next cold buffet. With
yellow squash and zucchini available all year long now, you might want
to include this in a festive winter celebration, like Super Bowl
Sunday.
Makes 6 servings
1/3 cup extra virgin olive oil
1 tablespoon white wine vinegar
1 teaspoons Dijon style mustard
Freshly ground black pepper to taste
2 tablespoons freshly snipped chives, plus additional for garnishing
2 small yellow squash, trimmed and grated or cut into thin matchstick
strips
2 small zucchini, timed and grated or cut into thin matchstick strips
2 pattypan squash (about 2 inches in diameter), stem removed and
grated or cut into thin matchstick strips
1 small red bell pepper, roasted, peeled, seeded, and very thinly
sliced
1 small sweet onion, very thinly sliced and separated into rings
In a small bowl, beat together the oil, vinegar, mustard, pepper and
chives.
In a medium size bowl, toss together all the squash and the bell
pepper. Pour the dressing over the vegetables and toss well. Let stand
30 minutes at room temperature.
