Selection of Tomatillos:
This types of greens should be bright, shiny pale green, like unripe
tomatoes. They should be enclosed in a papery thin, pale green husk,
with the stem attached, avoid any that have begun to ripen to yellow.
Do not buy them if they have bruises, cuts, or soft places. They should
be very firm, almost hard, to the touch. Size is not particularly
important, as long as they are in good condition.
