I love to serve these spicy sticks
together with spicy giant pumpkin seeds with grilled whole fish, such
as bluefish, trout or red snapper. But they also go very well with fat,
juicy turkey burgers.
Make 6 servings
1 cup all purpose flour
2 tablespoons old Bay or Cajun seasonings;
Or 2 teaspoons ground red (cayenne) pepper
3 pounds pumpkin, peeled, seeded and cut into thick sticks, as for
French fries
Mild vegetable oil, preferably peanut for deep frying
Salt to taste
Combine the flour with the Old Bay or Cajun seasoning in a plastic bag.
Toss the pumpkin sticks in the seasoned flour, tapping off the excess.
Heat the oil to 375 F in a deep fat
fryer. Fry the pumpkin sticks, in batches, until crisp and golden
brown, 3 to 4 minutes per batch.
Remove the spicy fried pumpkin with giant
pumpkin seeds from the oil with a slotted spoon and drain on paper
towels. Keep the fires warm in a 375 F oven while frying the remaining
pumpkin.
Sprinkle with salt and serve this simple
vegetable recipes hot.
