Onion, orange and tomato salad
My favorite salad to serve with fish dishes. I have included a recipe
for a vinaigrette which complements it perfectly.
Preparation time: 15 minutes
Serves 4

2 handfuls rocket

2 handfuls watercress

2 heads chicory, trimmed and finely
sliced

1 orange, peeled and divided into
segments

4 ripe tomatoes, cut into wedges

6 spring onions, trimmed and finely
chopped

Salt and black pepper
VINAIGRETTE

Arrange the rocket, watercress and
chicory in a large bowl. Cut the orange segments in half, remove any
seeds then toss them in with the tomatoes and spring onions. Season
lightly.

Whisk all the vinaigrette ingredients
together until thoroughly blended. Spoon over the salad, mix and serve.
