Spaghetti Bolognese

Spaghetti Bolognese

Number of servings: 2 to 3


  • 14 oz. spaghetti salt


  • 2 cloves garlic, thinly sliced

  • 1 onion

  • 1/2 cup mushrooms

  • 1 carrot

  • 3 tablespoons butter

  • 1 tablespoon oil

  • 9 oz. ground beef and pork

  • 1/2 cup red wine

  • 1 can tomato juice

  • 2-1/2 bouillon cubes

  • 1/4 teaspoon chili power nutmeg

  • 1-1/2 teaspoons sugar

  • Grated cheese


  1. Boil spaghetti in water with a little salt added for 15 minutes, stirring occasionally. Drain and set aside.

  2. Prepare sauce - Either crush or thinly slice garlic. Mince onion. Thinly slice mushrooms. Thinly slice carrot into triangular pieces.

  3. Saute onion and garlic in 3 tablespoons butter and 1 tablespoon oil in a heavy pot for 8 minutes until brown.

  4. Add ground meat and brown. Add mushrooms and carrot and cook a little longer.

  5. Combine red wine, tomato juice, bouillon cubes, chili powder, nutmeg, and 1-1/2 teaspoons sugar with above and simmer for 1 hour over low heat. Dish up spaghetti and pour sauce over. Garnish with grated cheese.


Cook onion and garlic until brown for a better flavor and more colorful sauce. After cooking spaghetti do not soak in cold water. Tomato sauce is the base for most sauces; sauces made from fresh or canned tomatoes are ideal. If none are on hand, tomato juice may be substituted. Tomato puree has less flavor.
