Tomato and onion salsa
A simple salsa that relies on a variety of tomatoes and onions for its
flavor and color.
Serves 4
Preparation time: 15 minutes

1 tsp cumin seeds

2 red and 2 yellow tomatoes, chopped

8 cherry or baby plum tomatoes, halved

1 red onion, chopped

6 spring onions, trimmed and chopped

Salt and black pepper

2 Tbsp olive oil

1 Tbsp white wine vinegar

2 Tbsp chopped fresh parsley

Heat a small non-stick frying pan then
add the cumin seeds and cook for 30 seconds or so, until fragrant. Turn
on to a chopping hoard and crush lightly with the end of a rolling pin,
then scrape into a bowl.

Add the prepared tomatoes and onions.

Season lightly, then add the oil and
vinegar and toss the salsa together. Allow to stand for at least an
hour before stirring in the parsley and serving.
