The secret here is to have everything
ready before you begin cooking this simple vegetable cooking recipes.
There is no better accompaniment to grilled fish.
Makes 6 servings
2 tablespoons mild vegetable oil, preferably peanut
1/2 pound shiitake mushrooms, stems
discarded, cut into large pieces
1/4 pound snow peas, topped, tailed and
strung; or 1 cup thawed frozen snow peas
2 cups cooked fresh corn kernels, cut from the cob (4 to 5 ears), or 2
cups thawed frozen corn kernels
2 tablespoons dry sherry or rice wine
1 tablespoon soy sauce
2 tablespoons chicken stock
1 teaspoon cornstarch
1 tablespoon sliced green onions (scallions)
Heat the oil in the wok over high heat. Cook the mushrooms, stirring,
for 2 minutes. Add the snow peas and cook, stirring, 2 more minutes.
Stir in the corn.
In a small bowl, mix together the sherry, soy sauce, stock and
cornstarch. Stir into the vegetables and cook, stirring, until the
sauce thickens, 1 to 3 minutes. Serve this simple cooking corn recipes
very hot, garnished with the green onions.
