Simple Stir Fried Corn with Snow Peas and Shiitake Mushrooms Recipes

The secret here is to have everything ready before you begin cooking this simple vegetable cooking recipes. There is no better accompaniment to grilled fish.


Makes 6 servings

  • 2 tablespoons mild vegetable oil, preferably peanut

  • 1/2 pound shiitake mushrooms, stems discarded, cut into large pieces

  • 1/4 pound snow peas, topped, tailed and strung; or 1 cup thawed frozen snow peas

  • 2 cups cooked fresh corn kernels, cut from the cob (4 to 5 ears), or 2 cups thawed frozen corn kernels

  • 2 tablespoons dry sherry or rice wine

  • 1 tablespoon soy sauce

  • 2 tablespoons chicken stock

  • 1 teaspoon cornstarch

  • 1 tablespoon sliced green onions (scallions)

  1. Heat the oil in the wok over high heat. Cook the mushrooms, stirring, for 2 minutes. Add the snow peas and cook, stirring, 2 more minutes. Stir in the corn.

  2. In a small bowl, mix together the sherry, soy sauce, stock and cornstarch. Stir into the vegetables and cook, stirring, until the sauce thickens, 1 to 3 minutes. Serve this simple cooking corn recipes very hot, garnished with the green onions.
